There's someone on the first page who was told that they were okay to start posting to their personal journal during the import, so I'm pretty sure it'll be okay to start posting to a community during import.
Like, you're already in the new "building", you're just waiting for the rest of your stuff to show up. You can open windows, turn on the lights, and install new bookshelves if you want, I'm pretty sure.
And I think the newer post on LJ will be ignored? You told the movers to pack up all of the stuff that was there at the time and now they're driving over; you may have to get any remaining mail forwarded. Or something.
On the plus side, if I have interpreted correctly and the newer post doesn't come along with the older ones, it is a whole lot shorter to import just a few entries than an entire community's worth. The queue will still take however long it takes, but the entries themselves will take a lot less time to process if there's only a few of them. So another option is to keep posting to LJ for another week or two until the import queue clears out, then re-import just the new entries and start posting here after that. (...Which I now see you already mentioned, because I somehow missed your last paragraph on my first read-through.)
